  • 340g all-purpose flour
  • 1 tsp salt
  • 230g unsalted butter (cold & cubed)
  • 140g ice cold water
  • 4 tart apples (about 700g after peeling/coring/slicing)
  • 300g red cherries (pitted & halved)
  • 50g brown sugar
  • 20g cornstarch
  • 1 tbsp ground cinnamon
  • 2 tsp vanilla extract
  • 1 beaten egg
  • 2 tbsp sugar crystals or coarse sugar

Instructions

  1. Prepare the crust by mixing flour and salt; blend in butter until crumbly. Add ice-cold water gradually until dough forms.
  2. Roll out half the dough into a circle; place in pie dish.
  3. Mix apples and cherries with brown sugar, cornstarch, cinnamon, and vanilla; pour into crust.
  4. Roll out remaining dough over filling; seal edges and cut slits to vent steam.
  5. Preheat oven to 180°C (350°F). Brush crust with egg wash and sprinkle with sugar. Bake for about 70 minutes until golden brown.
  6. Cool before serving.
