  • 1 cup shredded cheddar cheese

  • green onions
  • diced tomatoes
  • black olives

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub and dry the potatoes; pierce them several times with a fork and rub with olive oil, salt, and pepper.
  3. Bake the potatoes on a baking sheet for about 45 minutes or until tender.
  4. While the potatoes bake, brown the ground beef in a skillet; drain excess fat and stir in taco seasoning according to packet instructions.
  5. After baking, let the potatoes cool slightly before slicing open and filling with ground beef mixture; top with cheese.
  6. Return to oven for an additional 5 minutes until cheese melts.
  7. Serve topped with sour cream, green onions, tomatoes, olives, and cilantro.
