  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup cubed Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded mozzarella cheese, for melting over chicken
  • 1 cup grated Parmesan cheese
  • 2 oz cream cheese
  • 1 tsp Italian seasoning
  • Chopped parsley or dried herbs

Instructions

  1. Cook rotini in salted boiling water until al dente; reserve pasta water.
  2. Season chicken with Cajun seasoning and smoked paprika, salt, and pepper; sauté in olive oil and butter until golden-brown.
  3. Add garlic and half of the mozzarella to the pan; melt together.
  4. In the same skillet, combine heavy cream and broth; whisk in cream cheese until smooth.
  5. Stir in all cheeses until melted; season to taste.
  6. Mix cooked pasta into the sauce; adjust consistency with reserved pasta water if needed.
