  • 2 large eggs
  • 1/2 cup vegetable oil
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar (for cream cheese mixture)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Line muffin pans with paper liners.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt; set aside.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth. Gradually add dry ingredients until just combined.
  4. In another bowl, beat the cream cheese with sugar and vanilla until smooth.
