  • 1 green bell pepper (cut into 1" pieces)
  • ¾ English cucumber (peeled, seeded, and quartered into 1" slices)
  • 5 roma tomatoes (cut into 1" pieces)
  • ¼ cup red onion (thinly sliced)
  • ½ cup kalamata olives (whole and pitted)
  • 8 ounces feta cheese (cut into ½" chunks)
  • ⅓ cup olive oil
  • 3½ tablespoons red apple vinegar
  • 2 cloves garlic (minced)
  • 1½ teaspoons dried oregano (or 1½ tablespoons fresh)
  • 1 teaspoon dried dill (or 1 tablespoon fresh)
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Wash and chop the green bell pepper into 1-inch pieces.
  2. Peel and quarter the English cucumber into 1-inch slices.
  3. Dice the roma tomatoes into 1-inch pieces and thinly slice the red onion.
  4. In a large mixing bowl, combine all the chopped vegetables, olives, and feta cheese gently.
  5. For the dressing, whisk together olive oil, red apple vinegar, minced garlic, dried oregano, dried dill, salt, and pepper in a separate bowl.
  6. Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
