  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 200g block of feta cheese
  • 1 tbsp honey
  • 20g fresh basil

Instructions

  1. Preheat your oven to 200C (390F).
  2. Wash and cube the potatoes. Par-boil in water for 6-8 minutes, drain, and let steam dry.
  3. In a baking dish, combine par-boiled potatoes with olive oil, thyme, oregano, salt, pepper, and red chili flakes. Mix well.
  4. Roast the seasoned potatoes for about 30-40 minutes until golden brown.
  5. Add the feta block and squeeze half a lemon over it.
  6. Roast for an additional 15 minutes until everything is nicely browned.
  7. Squeeze out roasted garlic from its skins and mash it; mix with remaining lemon juice and fresh basil into the potatoes.
  8. Drizzle honey over the top before serving warm.
