  • 1/4 onion (quartered)
  • 1 garlic clove
  • 1 cup water
  • 1 tbsp chicken bouillon
  • 1/8 cup olive oil
  • 2 cups long grain white rice
  • 1/4 onion (finely diced)
  • 1 garlic clove (finely minced)
  • 1 tbsp chicken bouillon
  • pinch whole cumin
  • 1 1/2 cups water

Instructions

  1. Prepare the Tomato Sauce: Boil quartered tomatoes, onion, and garlic in water until soft (about 4-5 minutes). Blend with additional water and chicken bouillon until smooth.
  2. Cook the Rice: Heat olive oil in a large stock pot over medium heat. Add long grain rice; toast for about 5 minutes until lightly golden. Stir in finely diced onion and continue stirring for another minute.
  3. Combine Ingredients: Add minced garlic, chicken bouillon, whole cumin, prepared tomato sauce, and water to the pot. Stir well.
  4. Cook: Cover and simmer on medium heat for 12 minutes without lifting the lid. Turn off heat and let it sit covered for an additional 5 minutes.
  5. Serve: Fluff the rice before serving hot.
