  • 1¾ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F and prepare a 9-inch square baking dish by greasing and lining it with parchment paper.
  2. In a sauté pan, boil the fresh apple cider until reduced by half; whisk in diced butter until melted.
  3. In a bowl, mix eggs, granulated sugar, brown sugar, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt until smooth.
  4. Whisk in the reduced cider mixture; gently fold in flour until just combined.
  5. Pour batter into the prepared dish and bake for 22–25 minutes or until golden brown.
