  • 2 cups flour (spelt, white, or oat)
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 3/4 cup sugar
  • 1 cup milk (of choice)
  • 3 1/2 tbsp oil (or applesauce)
  • 2 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together flour, baking powder, salt, baking soda, and cinnamon.
  3. In another bowl, mix diced apples with sugar, then add milk, oil (or applesauce), and vanilla extract until combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Transfer the batter into a greased 9×5 inch loaf pan and bake for about 50 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool in the pan for a few minutes before transferring to a wire rack.
